What better way to start a weekend than with a homemade brunch? I hadn’t been feeling very well this past week, but I couldn’t stand doing nothing so I pushed through and made D and myself breakfast. French toast is a great thing to make for a weekend breakfast – it is easy to prepare, yet tastes rather-fancy and indulgent.
I’m also currently loving making no-milk fruit smoothie ( pretty much fruit slush ), it’s an easy and convenient way to up my daily fruit consumption in one go. I recently bought a few punnets of strawberries from the farmer’s market and this strawberry-orange-apple combo tastes divine. The apples bring so much sweetness, while the strawberries and orange add a punch of sharp and fresh flavor. It is truly a healthy treat to invigorate and start the day off right.
Zesty French Toast
4 slices bread
1/3 cup milk
1/4 tsp cinnamon
1 tsp vanilla extract
1/2 tbs sugar
Zest of 1 orange
1. Beat eggs, milk, cinnamon, vanilla extract and sugar, add orange zest. Whisk until blended.
2. Melt some butter on a preheated skillet. Dip a slice of bread into the egg mixture, about 5 seconds each side, allowing bread to slightly soak up some of the mixture.
3. Cook for about 2-3 minutes each side, until golden brown,
4. Serve with slices of fresh strawberries and maple syrup.
Strawberry & Orange Smoothie
1 punnet strawberries
3/4 cup water
6 ice cubes
Blend all ingredients together, serve.
