If you don’t have a sweet tooth, this cake might be for you. It’s sweet but not too sweet – just the right amount of sugar and matcha powder. The delightful flavor of matcha really shines through this simple cake. The cake is perfectly moist, even though the texture is a bit dense – like a pound cake. Do you know that matcha is claimed to contain ten times as much nutritional benefits as normal green tea? With normal green tea, you brew the tea leaves and discard them. Matcha is different in the sense that you’re actually consuming the whole tea leaves, at the same time ingesting all the good stuff – antioxidants. All the more reason to bake this cake this weekend?

125 gr butter
2/3 cup sugar
1 cup flour
1/2 tsp baking powder
1 tbs matcha powder
3 eggs, separated

1. Preheat oven to 170 degree Celcius. Cream butter in a bowl. Add in sugar and mix well.

2. Gradually add beaten egg yolks and stir well. Sift flour, baking powder, and green tea powder together and add the flour to the egg mixture.

3. In a separate bowl, beat egg whites until stiff peak forms. Gently fold in to the cake mixture.

4. Pour the batter into a buttered loaf pan. Bake for about 30-40 minutes or until a skewer inserted comes out clean.
