Microwave Mocha Self-Saucing Pudding

Don’t we all know that kind of situation when you. just. need. chocolate. right. now.

( I’m all too familiar with it, I must admit )

But sometimes I’m just not up to spending a few hours in the kitchen baking a cake, I just want an easy way out. If that’s the case for you too, then this one is for you. All you need is 10 minutes from start to finish, and you get yourself a warm, moist cake with rich and luscious mocha sauce. The hard part is to try not to gobble all four servings at once.

Microwave Mocha Self-Saucing Pudding
Adapted from Food Ideas April 2013

3/4 cup plain flour
1 tsp baking powder
1 tbsp cocoa powder
1 tsp instant espresso powder
1/2 cup sugar
60 gr butter, melted
1/2 cup milk

Sauce:
2 tsp cornflour
1 tbsp cocoa powder
1 tsp instant espresso powder
1/4 cup brown sugar
3/4 cup boiling water

1. Combine dry ingredients in a bowl. Stir in wet ingredients and whisk and smooth. Spoon into four 1 1/4 cup-capacity microwave-safe dishes.

2. Make sauce: Combine all ingredients and stir until smooth. Gently pour sauce evenly over batter in each dish.

3. Microwave for 5 minutes, or until tops are firm to touch.
