I have been seeing numerous recipes of Pandan Steamed Bread Pudding ( or Bingka Roti Kukus Pandan ) in some Malaysian food blogs and I thought steamed bread pudding was an interesting idea – especially when it is pandan-flavored. I have tried baked bread pudding before, but never the steamed one. I fortunately had a few slices of bread in the fridge, and I took it as a sure sign to try this recipe.
The resulting bread pudding has a smooth texture, and it’s just subtly sweet, nice to accompany your morning or afternoon tea. Unfortunately, I’m still not too fond of bread pudding – it tastes good, but I could only have a small portion at a time, as they tend to be overly fulfilling and “too much” for my liking.
Bingka Roti Kukus Pandan ( Pandan Steamed Bread Pudding )

3-4 slices of day-old bread
200 ml coconut milk
1/3 cup of sugar
1/4 tsp salt
1/4 tsp pandan paste
1. In a large bowl, whisk together coconut milk, egg, sugar, salt and pandan paste.
2. Soak bread in mixture for 5-10 minutes. Transfer to a baking dish. Pour any remaining liquid on top of the bread slices.
3. Steam for 15-20 minutes.
