The nice thing about leftover egg whites is the endless choice of what to make of them. This time I decided to make sponge pudding, because I haven’t had one in what seems to be a very long time. It makes a really nice light dessert,  easy and takes very little  time to make.

Coffee Sponge Pudding

Coffee Sponge Pudding

1 packet of chocolate-flavored agar powder
500 ml milk
1 tbs cocoa
1 tbs instant espresso powder
100 gr sugar
2 egg whites

1. Mix agar powder, milk, cocoa, and sugar in a small pan. Cook over medium heat, stirring occasionally, and bring to the boil.
2. Beat egg whites in a clean bowl until soft peaks form.
3. Pour agar mixture and beat until well combined, pour into prepared mold and refrigerate.
